Saag Paneer (Indian Spinach and Cheese Curry)

Ingredients

  • 400g fresh spinach leaves, washed and chopped
  • 200g paneer, cut into cubes
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon coriander powder
  • 2 tablespoons vegetable oil or ghee
  • 1/4 cup heavy cream or yogurt (optional)
  • Salt to taste
  • Water as needed

Instructions

  1. Prepare the Spinach

    Blanch the chopped spinach in boiling water for 2–3 minutes until wilted. Drain and immediately transfer to cold water to retain the green color. Puree the spinach in a blender until smooth and set aside.

  2. Cook the Paneer

    Heat 1 tablespoon of oil in a pan over medium heat. Lightly fry the paneer cubes until golden on all sides. Remove and set aside.

  3. Make the Base

    In the same pan, heat the remaining oil. Add cumin seeds and let them sizzle for a few seconds. Add chopped onions and sauté until golden brown. Stir in garlic, ginger, and green chilies, cooking for another minute.

  4. Add Spices and Tomatoes

    Add turmeric, chili powder, coriander powder, and garam masala. Stir briefly, then add the pureed tomatoes. Cook for 5–7 minutes until the mixture thickens and the oil begins to separate.

  5. Combine Spinach and Paneer

    Add the spinach puree to the pan, mixing well. Simmer for 5–7 minutes, adding a little water if needed to reach the desired consistency. Gently fold in the fried paneer cubes and cook for another 2–3 minutes.

  6. Finish with Cream

    Stir in heavy cream or yogurt if using, and adjust salt to taste. Simmer for an additional 2 minutes and remove from heat.

Serve

Serve Saag Paneer hot with naan, roti, or steamed rice. Garnish with a drizzle of cream or a sprinkle of fresh cilantro for added flavor and color.
