Ingredients
- 1 pound conch meat, finely chopped
- 1 small onion, finely chopped
- 1/2 green bell pepper, finely chopped

- 1/2 Scotch bonnet or jalapeño pepper, minced (optional, for heat)
- 2 cloves garlic, minced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon thyme
- 1/4 cup milk or water (as needed for batter consistency)
- 1 egg, lightly beaten
- Juice of 1 lime
- Vegetable oil for frying

Prepare the Conch
If using fresh conch, tenderize it by pounding gently with a meat mallet, then finely chop. If using canned or pre-cooked conch, drain well before chopping.

Mix the Batter
In a large bowl, combine chopped conch, onion, bell peppers, celery, hot pepper, and garlic. In a separate bowl, whisk together flour, baking powder, salt, black pepper, paprika, and thyme. Gradually add the dry mixture to the conch and vegetables. Stir in milk, egg, and lime juice until you get a thick batter that holds together but is not too runny.
