Risotto (Italian Creamy Rice)

- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth, kept warm

- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: fresh herbs (parsley, thyme) or mushrooms, peas, or saffron

Heat olive oil in a large pan over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant, about 3–4 minutes.

Toast the Rice
Add the Arborio rice to the pan, stirring to coat each grain with oil. Cook for 1–2 minutes until the edges of the rice appear translucent.

Deglaze and Simmer
Pour in the white wine, stirring constantly until it is mostly absorbed by the rice. Begin adding warm broth one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle. Continue this process until the rice is tender but still slightly firm to the bite, about 18–20 minutes.

Remove the pan from heat. Stir in butter and Parmesan cheese until the risotto becomes creamy and smooth. Season with salt and pepper to taste.
