Quesillo (Venezuelan Flan)

Ingredients

  • 1 cup sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Caramel

    In a medium saucepan over medium heat, melt the sugar until it becomes golden brown, stirring occasionally to prevent burning. Immediately pour the caramel into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to harden.

  2. Mix the Flan

    In a large bowl, whisk together the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt until smooth and well combined. Strain the mixture through a fine sieve to ensure an ultra-smooth texture.

  3. Bake the Quesillo

    Preheat the oven to 350°F (175°C). Pour the flan mixture over the hardened caramel in the mold. Place the mold in a larger baking dish and add hot water to the outer dish until it reaches halfway up the sides of the flan mold (creating a water bath). Bake for 50–60 minutes, or until the flan is set but still slightly jiggly in the center.

  4. Cool and Serve

    Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours, preferably overnight. To serve, run a knife around the edges and invert onto a serving plate so the caramel drips over the top.
