Belokranjska Pogača (White Carniola Flatbread)

Ingredients
- 500 g all-purpose flour
- 1 packet (7 g) dry yeast
- 250 ml warm milk
- 1 teaspoon sugar
- 1 teaspoon salt
- 50 g butter, melted
- 2 eggs (one for dough, one for brushing)
- 250 g cottage cheese
- 150 g sour cream

Prepare the Dough
In a small bowl, dissolve the sugar in warm milk and sprinkle yeast on top. Let it sit for 10 minutes until frothy.
In a large mixing bowl, combine flour and salt. Add the yeast mixture, melted butter, and one egg. Mix until a soft dough forms.
Knead the dough for 8–10 minutes until smooth and elastic. Cover with a cloth and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

Prepare the Filling
In a medium bowl, combine cottage cheese, sour cream, and a pinch of salt. Mix until smooth.

Assemble the Pogača
Preheat the oven to 180°C (350°F).
Roll out the dough into a rectangle about 1 cm thick. Spread the cheese mixture evenly over the dough.
Fold the dough over the filling and gently press the edges to seal. Shape it into a round or oval flatbread and place it on a greased baking tray.
Beat the remaining egg and brush it over the top of the pogača for a golden finish.

Bake for 25–30 minutes, or until golden brown and cooked through. Allow to cool slightly before serving.
