Posta Negra is a savory and rich beef roast from the Caribbean coast of Colombia, known for its deep, dark color and sweet-spiced flavor. This dish is made by slow-cooking beef in a flavorful sauce of panela (unrefined sugar), spices, and vegetables, giving it a caramelized exterior with a tender and juicy inside. Often served with rice and fried plantains, Posta Negra is a standout dish that embodies the heart of Colombian coastal cuisine.

Ingredients

2 lbs (900 g) beef round roast

1/2 cup (120 ml) Worcestershire sauce

1/4 cup (60 ml) vinegar

1/4 cup (50 g) panela or brown sugar

1 large onion, chopped

4 garlic cloves, minced

1 bell pepper, chopped

2 tbsp (30 ml) vegetable oil

1 cup (240 ml) beef broth

1/4 tsp (1 g) cumin

1/4 tsp (1 g) allspice

1/4 tsp (1 g) black pepper

Salt to taste

2 tbsp (30 g) tomato paste

Instructions

Marinate the Beef: In a large bowl, marinate the beef round roast with Worcestershire sauce, vinegar, and panela (or brown sugar) for at least 4 hours, preferably overnight. This will infuse the meat with a sweet and tangy flavor.

Sear the Beef: In a large pot, heat the vegetable oil over medium heat. Remove the beef from the marinade and sear on all sides until browned, about 3-4 minutes per side. Remove the beef and set it aside.

Prepare the Sauce: In the same pot, add the chopped onion, garlic, and bell pepper. Sauté for 5 minutes until softened. Stir in the cumin, allspice, and black pepper, cooking for another minute to release the flavors.

Simmer the Beef: Return the beef to the pot and pour in the beef broth. Add the tomato paste and remaining marinade. Bring to a simmer, cover, and cook on low heat for about 2-3 hours, until the beef is tender and the sauce has thickened.

Adjust Seasoning: Check the seasoning and add salt to taste. If the sauce is too thick, add more broth or water to achieve the desired consistency.

Slice and Serve: Once the beef is fully cooked, remove it from the pot and let it rest for 10 minutes before slicing. Serve with the rich sauce poured over the slices.
