Ingredients
2 lbs (900 g) chicken breasts
12 cups (3 liters) water

2 ears of corn, cut into thirds
2 tbsp (30 g) guascas (dried herb)
1 cup (240 ml) heavy cream
1/4 cup (50 g) capers
2 avocados, sliced
2 green onions, finely chopped
Salt and pepper to taste
Instructions
Cook the Chicken: In a large pot, add the chicken breasts and water. Bring to a boil and cook until the chicken is fully cooked, about 25 minutes. Remove the chicken, shred it, and set it aside. Keep the broth in the pot.
Add the Potatoes: To the chicken broth, add the yellow, white, and creole potatoes. Let the soup simmer until the potatoes begin to break down, thickening the broth, about 30 minutes.
Add Corn and Guascas: Add the corn pieces and guascas to the soup and cook for another 15-20 minutes, allowing the flavors to meld.
Season the Soup: Add salt and pepper to taste. If the soup becomes too thick, add a bit of water to adjust the consistency.
Shred the Chicken: While the soup is cooking, shred the cooked chicken breasts and add them back to the pot. Stir to combine and heat through.
