Ingredients:

1 lb (0.45 kg) chicken, cut into pieces

1 onion, finely chopped

2 carrots, sliced

1 celery root, diced

1/4 cup (60 ml) lemon juice

2 eggs

Salt and pepper to taste

Instructions:

In a large pot, bring chicken pieces to a boil in 8 cups (1.9 liters) of water. Skim off any foam that rises to the surface. Add chopped onion, sliced carrots, parsnip, and diced celery root to the pot. Simmer until the vegetables are tender. Remove the chicken from the pot, shred the meat, and return it to the soup. Stir in rice and continue simmering until the rice is cooked. In a bowl, whisk together lemon juice and eggs. Gradually add a ladle of hot soup to the egg mixture, stirring constantly to temper the eggs. Slowly pour the egg mixture back into the pot, stirring continuously. Season with salt and pepper to taste. Simmer for an additional 5-7 minutes. Garnish with fresh parsley before serving.
