Instructions

  1. Prepare the Pastry

    In a large bowl, combine the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the egg and vanilla extract, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

  2. Prepare the Pineapple Filling

    In a medium saucepan, combine the crushed pineapple, granulated sugar, cornstarch, lemon juice, and salt. Cook over medium heat, stirring constantly until the mixture thickens and becomes glossy. Remove from heat and let cool slightly.

  3. Assemble the Tarts

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness. Cut the dough into desired tart shapes and press them into a greased tart pan or individual tart molds. Spoon the pineapple filling into each tart shell, spreading evenly.

  4. Bake

    Bake the tarts in the preheated oven for 20–25 minutes, or until the edges are golden brown. Remove from the oven and let cool on a wire rack.

  5. Serve

    Dust the Pine Tarts with powdered sugar and serve with a dollop of whipped cream if desired.
