French Macarons (Delicate Almond Meringue Cookies)

French macarons are elegant, colorful confections with crisp shells, chewy interiors, and luscious fillings. Though they require precision, making them at home is a fun and rewarding culinary adventure.

Ingredients

  • 1 cup (0.2 kg) almond flour
  • 1 3/4 cups (0.2 kg) powdered sugar
  • 3 large egg whites (approx. 0.1 kg)
  • 1/4 cup (0.05 kg) granulated sugar
  • 1/4 teaspoon (0.00125 kg) cream of tartar
  • Food coloring (optional)
  • 1/2 cup (0.12 liters) heavy cream
  • 8 oz (0.23 kg) white chocolate, finely chopped

Instructions

  1. Prepare the Ingredients

    Sift almond flour and powdered sugar together to create a smooth, lump-free mixture.

  2. Make the Meringue

    Whisk egg whites until frothy. Add cream of tartar, then gradually whisk in granulated sugar until stiff peaks form. Mix in food coloring if desired.

  3. Fold in Dry Ingredients

    Gently fold sifted almond flour mixture into the meringue. Batter should flow like lava and form ribbons when lifted. Avoid over- or under-mixing.

  4. Pipe the Macarons

    Transfer batter to a piping bag with a round tip. Pipe 1.5-inch circles on a parchment-lined baking sheet. Tap tray to release air bubbles. Rest 30–60 minutes until a skin forms on the surface.

  5. Bake

    Preheat oven to 300°F (150°C). Bake 15–18 minutes, until tops are firm and feet have formed. Cool completely on the tray.

  6. Prepare the Filling

    Heat cream until simmering. Pour over chopped white chocolate, let sit 1 minute, then stir until smooth. Cool until thick enough to pipe.

  7. Assemble

    Pair shells by size. Pipe ganache on the flat side of one, then sandwich with another. Repeat with remaining shells.

Serving

For best flavor, refrigerate assembled macarons overnight to allow flavors to meld. Store in an airtight container and bring to room temperature before serving. Perfect for parties, gifts, or indulgence.
