Rihaakuru (Maldivian Tuna Paste)

Ingredients

  • 1 kg tuna (fresh or canned)
  • 2–3 cups water (enough to cover the fish)
  • Salt to taste

Instructions

  1. Cook the Tuna

    Place the tuna in a large pot and cover with water. Bring to a boil over medium heat, skimming off any foam that forms. Reduce the heat and simmer until the tuna is fully cooked and tender, about 20–30 minutes.

  2. Shred and Simmer

    Remove the tuna from the water and let it cool slightly. Flake the fish into small pieces, removing bones and skin. Return the shredded tuna to the pot with a small amount of water (just enough to prevent sticking).

  3. Reduce to Rihaakuru

    Simmer the tuna over low heat, stirring frequently to prevent burning. Continue cooking for several hours until the liquid evaporates and the paste thickens to a rich, dark consistency. Add salt to taste.

  4. Store and Serve

    Transfer the Rihaakuru to a clean jar and let it cool completely. It can be stored in the refrigerator for several weeks. Serve as a condiment with steamed rice, roshi, or use as a flavor enhancer in other dishes.
