Passatelli (Italian Breadcrumb Noodles)

Ingredients

  • 200 g (7 oz) fresh breadcrumbs
  • 100 g (3.5 oz) Parmesan cheese, finely grated
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • Zest of 1 lemon (optional, for extra flavor)
  • Salt, to taste
  • 4 cups chicken or vegetable broth
  • Freshly ground black pepper, to taste
  • Nutmeg, a pinch (optional)

Instructions

  1. Prepare the Dough

    In a large bowl, combine breadcrumbs, Parmesan cheese, and flour.

    Add eggs, lemon zest (if using), a pinch of nutmeg, and a small amount of salt. Mix until a smooth, slightly sticky dough forms.

  2. Shape the Passatelli

    Fill a passatelli press or a potato ricer with the dough. Press the dough directly into the boiling broth to form short, thick noodles. If you don’t have a press, shape small logs of dough and flatten slightly before dropping into the broth.

  3. Cook the Noodles

    Simmer the broth over medium heat. Passatelli will cook quickly - about 2–3 minutes. They are done when they float to the surface.

  4. Serve

    Ladle the Passatelli and broth into bowls. Season with freshly ground black pepper and extra grated Parmesan if desired.

Serving

Passatelli are traditionally served in a hot, flavorful broth, but they can also be served with butter and sage for a dry variation. Pair with crusty bread and a simple salad for a complete Italian meal.
