Nidi di Rondine (Italian Stuffed Pasta Nests)

Ingredients
For the Pasta Nests
- 8 sheets lasagna pasta, cooked according to package instructions
- 2 tablespoons butter, for greasing
For the Meat Filling
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 250 g (about 1/2 lb) ground beef
- 250 g (about 1/2 lb) ground pork
- 1/2 cup tomato passata
- Salt and pepper to taste
- 1/4 teaspoon nutmeg
For the Béchamel Sauce
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 2 cups milk, warmed
- Salt and white pepper to taste
- Pinch of nutmeg
For Assembling
- 1/2 cup grated Parmesan cheese

Prepare the Meat Filling
Heat olive oil in a skillet over medium heat. Add onion, carrot, and celery, and sauté until soft. Add ground beef and pork, breaking it up with a spoon, and cook until browned. Stir in tomato passata, season with salt, pepper, and nutmeg. Simmer for 15–20 minutes, then remove from heat.

Make the Béchamel Sauce
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes. Gradually whisk in warm milk, stirring constantly until thickened. Season with salt, white pepper, and a pinch of nutmeg.

Assemble the Pasta Nests
Preheat the oven to 180°C (350°F). Grease a baking dish with butter. Cut lasagna sheets into rectangles (about 10x12 cm). Place a spoonful of meat filling at the center of each rectangle, roll it up like a nest, and place seam-side down in the baking dish.

Add Béchamel and Cheese
Pour béchamel sauce over the pasta nests, making sure each is generously coated. Sprinkle grated Parmesan evenly over the top.

Bake
Cover with aluminum foil and bake for 25–30 minutes. Remove foil and bake an additional 10 minutes, or until the top is golden and bubbling.
