Ingredients

  • 2 cups rice
  • 1 cup black-eyed peas (cowpeas)
  • 4 cups water
  • 2 dried sorghum leaves (optional, for color)
  • 1 tablespoon baking soda (for cooking the beans)
  • Salt to taste
  • 2 ripe plantains
  • 1 cup cooked spaghetti (optional, for serving)
  • Tomato stew or sauce, for serving
  • Fried fish or chicken, for serving
  • Shito (black pepper sauce), for serving
  • Garnishes: sliced tomatoes, chopped onions, boiled eggs, avocado slices

Instructions

  1. Prepare Rice and Beans

    Rinse the rice and beans separately under cold water. In a large pot, combine the rice and beans with water. Add the dried sorghum leaves (if using) and baking soda. Bring to a boil, then reduce the heat and simmer until the rice and beans are cooked and tender, about 20–25 minutes. Add more water if needed.

  2. Fry Plantains

    While the rice and beans are cooking, peel the plantains and cut them into slices. Fry the plantain slices until golden brown and crispy. Drain on paper towels.

  3. Season Rice and Beans

    Once the rice and beans are cooked, drain any excess liquid and season with salt to taste.

  4. Assemble Waakye

    To serve, place a portion of Waakye on a plate or in a bowl. Add fried plantains, cooked spaghetti (if using), tomato stew or sauce, and fried fish or chicken. Drizzle with shito and garnish with sliced tomatoes, chopped onions, boiled eggs, and avocado slices.
