1 tbsp (15 ml) oil
1 lemongrass stalk, finely chopped
1 clove garlic, minced
1-inch (2.5 cm) galangal, grated
1 small chili (optional), chopped
1 tsp turmeric powder
For Serving:
1 lb (450 g) rice noodles, cooked
2 cups (200 g) shredded cucumber
1 cup (50 g) bean sprouts
1/2 cup (25 g) fresh herbs (mint, basil, or cilantro)
1/4 cup (25 g) julienned green papaya (optional)

Instructions:
Prepare the Fish Curry Base: In a pot, bring 4 cups of water to a boil. Add fish fillets and cook until tender (about 5-7 minutes). Remove fish, flake into small pieces, and set aside.
Make the Curry Sauce: In the same pot, heat oil over medium heat. Sauté lemongrass, garlic, galangal, and chili until aromatic. Add turmeric powder, fish paste, and flaked fish. Stir well. Pour in coconut milk and fish sauce. Simmer for 10 minutes, stirring occasionally. Adjust seasoning with sugar and lime juice.
Cook the Noodles: Cook rice noodles according to package instructions. Drain and rinse with cold water.
Assemble the Dish: In a bowl, place a generous portion of noodles. Ladle the curry sauce over the top. Add shredded cucumber, bean sprouts, fresh herbs, and green papaya. Garnish with lime wedges.
