Nacatamal (Nicaraguan Corn and Pork Tamales)

Ingredients
For the Masa
- 4 cups corn masa (corn dough)
- 1 cup pork lard or vegetable shortening
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup chicken broth (adjust as needed for consistency)
For the Filling
- 2 pounds pork shoulder, cut into small cubes
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 2 garlic cloves, minced
- 1 medium onion, finely chopped
- 1 red bell pepper, diced
- 1/2 cup tomato sauce
- 1/2 cup cooked rice
- 1/2 cup green olives, chopped
- 2 hard-boiled eggs, sliced
- 2 tablespoons capers (optional)
For Assembly
- Banana leaves, cleaned and cut into large squares
- Kitchen string or twine for tying

Prepare the Masa
In a large bowl, combine the corn masa, lard, baking powder, and salt. Gradually add chicken broth while kneading until the dough is soft and spreadable, but not too sticky.

Cook the Filling
In a skillet, heat a little oil over medium heat. Sauté the onion, garlic, and bell pepper until softened. Add the pork, season with salt, pepper, and cumin, and cook until lightly browned. Stir in tomato sauce and cook for another 5–10 minutes. Remove from heat and let cool slightly.

Assemble the Nacatamales
Lay a banana leaf flat and spread a portion of masa in the center, about 1/4 inch thick. Add a spoonful of the pork mixture, a slice of egg, some olives, rice, and capers if using. Fold the banana leaf over the filling, tucking in the edges, and tie securely with string. Repeat with remaining ingredients.

Steam the Nacatamales
Place the wrapped Nacatamales in a large steamer or pot with a rack. Steam over medium heat for 2–3 hours, adding water as needed to maintain steam. Check occasionally to ensure they do not burn.
Serve
Remove the twine and carefully unwrap the banana leaves. Serve the Nacatamales hot, accompanied by fresh tortillas, sour cream, or a side salad.
