Ingredients

  • 1/4 cup (60 ml) milk
  • 3 large eggs
  • 1 tsp (5 ml) vanilla extract
  • Zest of 1 lemon

Instructions

  1. Prepare the Dough

    In a bowl, mix flour, sugar, and salt. Add butter and rub it into the dry ingredients until crumbly. Gradually add water and knead into a smooth dough. Wrap and chill for 30 minutes.

  2. Make the Filling

    In a mixing bowl, beat the ricotta cheese, sugar, and milk until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and lemon zest.

  3. Preheat and Roll Dough

    Preheat your oven to 350°F (175°C). Roll out the dough on a floured surface to 1/8-inch (3 mm) thickness. Cut into circles to fit muffin tin molds. Line the molds with the dough.

  4. Assemble and Bake

    Pour the filling into each lined mold, filling to about 3/4 full. Bake for 25-30 minutes, or until the filling is set and the tops are lightly golden.

  5. Cool and Remove

    Let the Queijadas cool in the tin for 10 minutes before gently removing them.

Serving

Serve Queijadas at room temperature or slightly chilled. Dust with powdered sugar or pair with a cup of coffee or tea for an elegant dessert experience.
