Ndiwo (Malawi Vegetable Relish)

Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 tomatoes, chopped
- 1–2 cloves garlic, minced
- 1 bunch pumpkin leaves, spinach, or kale, washed and chopped
- 1/2 cup groundnut (peanut) flour
- 1 cup warm water
- Salt to taste

Heat the vegetable oil in a pan over medium heat. Add the onion and garlic, cooking until soft and fragrant. Stir in the chopped tomatoes and cook until they break down into a sauce.

Cook the Greens
Add the chopped pumpkin leaves (or spinach/kale) to the pan. Stir well and allow them to wilt and soften, about 5–7 minutes.

Add Groundnuts
In a small bowl, mix the groundnut flour with warm water to form a smooth paste. Slowly add this mixture to the pan, stirring constantly to prevent lumps.

Cook for another 5–10 minutes, stirring occasionally, until the relish thickens and the flavors blend. Season with salt to taste.

Serve Ndiwo hot as a side dish to nsima, rice, or boiled cassava.
