Mutabbaq (Stuffed Pan-Fried Pastry)

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water (adjust as needed)
- 2 tablespoons vegetable oil (for dough)
- 250g ground beef or lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 small carrot, finely grated (optional)
- 2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons vegetable oil or ghee (for frying)
- Fresh herbs (parsley or cilantro), chopped

Prepare the Dough
In a large bowl, combine flour and salt. Gradually add water and 2 tablespoons oil, kneading until a soft, smooth dough forms.
Cover the dough and let it rest for at least 30 minutes.

Prepare the Filling
In a skillet over medium heat, heat 1–2 tablespoons oil. Add chopped onions and garlic, sautéing until fragrant and soft.
Add ground meat, cooking until browned. Stir in grated carrot, green chilies, cumin, coriander, salt, and pepper. Cook for a few more minutes until everything is well combined.
Remove from heat and mix in fresh herbs. Let the filling cool slightly.

Assemble the Mutabbaq
Divide the dough into equal portions and roll each piece into a thin circle or square.
Place a spoonful of the meat filling in the center of each piece of dough.
Fold the edges over to encase the filling completely, forming a neat square or rectangle.

Cook the Mutabbaq
Heat vegetable oil or ghee in a skillet over medium heat. Fry each Mutabbaq until golden brown and crispy on both sides, about 2–3 minutes per side.
Remove from skillet and drain on paper towels.
