Jareesh (Cracked Wheat)

Ingredients
- 2 cups jareesh (cracked wheat)
- 1 lb (450 g) chicken or lamb, cut into small pieces
- 1 large onion, finely chopped
- 2 tablespoons ghee or vegetable oil
- 4 cups chicken or lamb broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- Salt to taste
- Optional: toasted pine nuts or slivered almonds for garnish
- Fresh parsley for garnish

Prepare the Meat
Heat ghee or oil in a large pot over medium heat. Add the chopped onion and sauté until golden and fragrant. Add the meat, season with salt, pepper, cumin, and cinnamon, and cook until browned on all sides.

Cook the Jareesh
Rinse the cracked wheat under cold water and drain. Add the jareesh to the pot with the meat and stir to combine. Pour in the broth, bring to a boil, then reduce the heat to low. Cover and simmer for 40–50 minutes, stirring occasionally, until the wheat is soft and the meat is tender.

Check seasoning and adjust salt or spices if needed. For a creamier texture, lightly mash some of the wheat with the back of a spoon.
