- 4 large poblano peppers

- 2 large eggs, separated
- 1/2 cup all-purpose flour

Prepare the Peppers
Char the poblano peppers over an open flame or under a broiler until the skin is blackened and blistered. Place the peppers in a sealed plastic bag or cover with a clean towel for 10 minutes to steam. Peel off the charred skin, make a slit down one side of each pepper, and carefully remove the seeds.
