Ingredients
1 lb (0.45 kg) fresh or frozen molokhia leaves, finely chopped
1 lb (0.45 kg) chicken pieces (optional)

2 tbsp (30 g) ground coriander
2 tbsp (30 ml) olive oil or butter
1 tsp (5 g) ground black pepper
1 tsp (5 g) salt, or to taste
1 lemon, cut into wedges (for serving)
Optional: 1 hot chili pepper, minced (for a spicy kick)
Instructions
Cook the Chicken (if using): In a large pot, bring the chicken broth or water to a boil. Add the chicken pieces and cook until tender, about 30 minutes. Remove the chicken, shred it, and set it aside, keeping the broth in the pot.
Prepare the Molokhia: If using fresh molokhia, wash and finely chop the leaves. If using frozen, allow it to thaw slightly before cooking. Add the molokhia leaves to the broth, stirring well to combine.
Season the Soup: In a separate skillet, heat the olive oil or butter over medium heat. Add the minced garlic and sauté until golden brown. Stir in the ground coriander and cook for another minute until fragrant. Add this garlic-coriander mixture to the molokhia soup, stirring well.
Simmer the Molokhia: Reduce the heat to low and let the soup simmer for 10-15 minutes. Stir occasionally, making sure the leaves are fully incorporated into the broth. Season with salt and pepper to taste. If you like a spicier soup, add the minced chili pepper at this stage.
Add the Chicken (if using): Return the shredded chicken to the pot, stirring to combine. Simmer for an additional 5 minutes to allow the flavors to meld.
Serving
Molokhia is traditionally served hot, accompanied by steamed white rice or flatbread. Squeeze fresh lemon juice over the soup just before eating to enhance the flavor.
