Instructions
Cook the Meat: In a large pot, add the beef or lamb chunks and cover with water. Bring to a boil, skimming off any foam that rises to the surface. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender. Once cooked, remove the meat and set it aside. Reserve the broth for later use.
Cook the Rice: In a medium pot, add the rice and 4 cups of the reserved broth. Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is fully cooked and fluffy.
