Ingredients

1 cup (0.2 kg) brown lentils, rinsed

2 cups (480 ml) tomato sauce

3 cloves garlic, minced

2 tbsp (30 ml) white vinegar

2 tbsp (30 ml) vegetable oil

1 tbsp (15 g) ground cumin

1 tsp (5 g) ground coriander

1 tsp (5 g) paprika

1/4 tsp (1 g) cayenne pepper (optional)

Salt, to taste

Pepper, to taste

Instructions

Cook the Lentils: In a medium pot, add the rinsed lentils and cover with water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are tender but not mushy. Drain and set aside.

Cook the Rice: In a separate pot, cook the rice according to the package instructions, using salted water. Once cooked, fluff the rice with a fork and set aside.

Cook the Pasta: In another pot, bring salted water to a boil and cook the macaroni or small pasta until al dente. Drain and set aside.
