  • 1-inch piece ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon paprika
  • 1 cup coconut milk
  • 1/2 cup water or chicken broth
  • 2 tablespoons fish sauce (optional)
  • 1 tablespoon tamarind paste or juice of 1 lime
  • Salt to taste
  • Fresh cilantro or Thai basil for garnish

Instructions

  1. Prepare the Aromatics

    Heat the vegetable oil in a large skillet or saucepan over medium heat. Add the chopped onion and sauté until golden brown. Stir in the garlic and ginger and cook for another 1–2 minutes until fragrant.

  2. Cook the Meat

    Add the meat pieces to the pan and sear until lightly browned on all sides.

  3. Add Spices and Tomatoes

    Sprinkle in the curry powder, turmeric, chili powder, and paprika. Stir well to coat the meat with the spices. Add the chopped tomatoes and cook until they soften and start to break down.
