Menemen (Turkish Scrambled Eggs with Vegetables)

Ingredients

  • 3 medium tomatoes, finely chopped or grated
  • 4 large eggs
  • 1 small onion, finely chopped (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon red pepper flakes or paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

Sauté the Vegetables
  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add the chopped peppers (and onion, if using), and cook for about 5–7 minutes until softened and slightly golden.
Add the Tomatoes
  1. Stir in the chopped tomatoes and cook for another 7–10 minutes, stirring occasionally, until the mixture thickens and most of the liquid evaporates.
  2. Season with salt, pepper, and red pepper flakes or paprika if desired.
Cook the Eggs
  1. Reduce the heat to low. Crack the eggs directly into the pan and gently stir them into the tomato mixture.
  2. For a creamier Menemen, stir continuously until the eggs are softly set. For a more traditional texture, leave the eggs slightly runny.
Serve
  1. Remove from heat and garnish with freshly chopped parsley.
  2. Serve immediately with warm bread for dipping.
