Menemen (Turkish Scrambled Eggs with Vegetables)
Discover the vibrant and comforting flavors of Turkish cuisine with Menemen, a beloved breakfast dish made with eggs, tomatoes, green peppers, and spices. Light yet full of flavor, Menemen is perfect for a leisurely morning meal, best enjoyed with crusty bread and a cup of strong Turkish tea.
Ingredients
- 3 tablespoons olive oil or butter
- 2 green peppers, chopped (Turkish sivri biber or regular bell peppers)
- 3 medium tomatoes, finely chopped or grated
- 4 large eggs
- 1 small onion, finely chopped (optional)
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon red pepper flakes or paprika (optional)
- Fresh parsley, chopped (for garnish)
Instructions
Sauté the Vegetables
- Heat olive oil or butter in a skillet over medium heat.
- Add the chopped peppers (and onion, if using), and cook for about 5–7 minutes until softened and slightly golden.
Add the Tomatoes
- Stir in the chopped tomatoes and cook for another 7–10 minutes, stirring occasionally, until the mixture thickens and most of the liquid evaporates.
- Season with salt, pepper, and red pepper flakes or paprika if desired.
Cook the Eggs
- Reduce the heat to low. Crack the eggs directly into the pan and gently stir them into the tomato mixture.
- For a creamier Menemen, stir continuously until the eggs are softly set. For a more traditional texture, leave the eggs slightly runny.
Serve
- Remove from heat and garnish with freshly chopped parsley.
- Serve immediately with warm bread for dipping.
Serving
Menemen is a staple of Turkish breakfasts but is delicious at any time of day. Pair it with olives, feta cheese, and fresh cucumbers for a full Mediterranean-style spread.
Savor the simplicity and warmth of Menemen, a dish that brings the heart of Turkish home cooking to your table — comforting, colorful, and irresistibly satisfying.
