Lokum (Turkish Delight)

Ingredients
- 3 cups granulated sugar
- 1 cup cornstarch
- 1 teaspoon cream of tartar
- 4 cups water (divided)
- 1 tablespoon lemon juice

- 1 cup chopped pistachios (optional)
- Powdered sugar, for dusting
- Extra cornstarch, for dusting
Instructions
Prepare the Syrup
- In a medium saucepan, combine 1½ cups of water, sugar, and lemon juice.
- Stir over medium heat until the sugar dissolves.
- Once dissolved, stop stirring and let the mixture boil until it reaches 240°F (115°C) on a candy thermometer (soft-ball stage).
Make the Starch Mixture
- In a separate large saucepan, whisk together cornstarch, cream of tartar, and the remaining 2½ cups of water until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens into a smooth, glue-like paste.
Combine and Cook
- Slowly pour the hot sugar syrup into the thickened starch mixture, stirring constantly.
- Reduce the heat to low and continue cooking, stirring frequently, for about 45 minutes to 1 hour, until the mixture becomes golden and very thick.
Add Flavoring and Nuts
- Stir in rosewater or orange blossom water and pistachios (if using).
- Mix well to distribute evenly.
Set the Lokum
- Line a square baking pan (8x8 inches) with parchment paper and dust generously with a mixture of cornstarch and powdered sugar.
- Pour the mixture into the pan, smooth the top, and let it cool completely at room temperature for several hours or overnight.
Cut and Coat
- Once firm, dust the top with more cornstarch and powdered sugar.
- Turn the slab out onto a cutting board, remove the parchment, and cut into bite-sized cubes.
- Toss each piece in more powdered sugar and cornstarch to prevent sticking.

- Store in an airtight container at room temperature for up to two weeks.
