Ingredients

- 1 1/2 cups water
- 2 tablespoons rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 200g fresh sushi-grade tuna or salmon, cubed
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon grated ginger
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 1/2 cup edamame, cooked
- 1 small carrot, julienned
- 1 tablespoon sesame seeds
- Optional: seaweed salad, pickled ginger, green onions, or sriracha mayo

Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot, bring to a boil, then reduce heat and simmer, covered, for 15 minutes. Remove from heat and let it sit, covered, for 10 minutes. Mix rice vinegar, sugar, and salt, then gently fold into the cooked rice.

In a small bowl, combine soy sauce, sesame oil, and grated ginger. Add the cubed tuna or salmon, tossing gently to coat. Let it marinate in the refrigerator for 10–15 minutes.
