Chipa (Paraguayan Cheese Bread)

Ingredients

  • 2 cups tapioca starch (also called cassava starch)
  • 1 cup grated Paraguayan cheese or a mix of mozzarella and Parmesan
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. Prepare the Dough

    Preheat the oven to 375°F (190°C). In a large bowl, combine the tapioca starch and salt. Add the grated cheese and mix well. In a separate bowl, beat the eggs, then add the softened butter and milk, mixing until smooth. Gradually pour the wet ingredients into the dry ingredients, stirring until a sticky dough forms.

  2. Shape the Chipa

    Take small portions of dough and roll them into small balls or rings, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper, leaving some space between each piece.

  3. Bake

    Bake in the preheated oven for 15–20 minutes, or until the Chipa turns golden on top and slightly firm to the touch.

  4. Serve
