So'o Yosopy (Paraguayan Beef Soup)

Ingredients
- 1 lb (450 g) beef with bone (brisket or shank recommended)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 cup pumpkin or squash, diced
- 1/2 cup corn kernels
- 1/2 cup green peas
- 1/2 cup noodles or small pasta (optional)
- 6 cups beef broth or water
- 2 tablespoons vegetable oil
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh coriander (cilantro)

Prepare the Meat
Heat vegetable oil in a large pot over medium heat. Add the beef and brown on all sides. Add chopped onion and garlic, cooking until softened and aromatic.

Simmer the Soup
Pour in the beef broth or water, bring to a boil, then reduce heat to low. Cover and simmer for 1 to 1.5 hours, or until the meat is tender and flavorful. Skim off any foam that forms on the surface.

Add Vegetables
Add carrots, potatoes, pumpkin, corn, and peas to the pot. Continue simmering for 15–20 minutes, or until vegetables are tender. If using noodles, add them during the last 10 minutes of cooking.

Season the soup with salt, black pepper, and paprika. Stir in fresh parsley and coriander just before serving. Remove the beef from the bones, shred or cut into pieces, and return to the soup.
