Oil Down (Trinidadian One-Pot Stew)

Ingredients
- 1 lb salted meat (salted beef, pork, or chicken), cut into pieces
- 1 lb breadfruit, peeled and cut into chunks (or substitute with green banana or yam)
- 2 cups callaloo or spinach
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 sweet potato, peeled and chopped
- 1 can (14 oz) coconut milk
- 1–2 cups water or stock
- 2 sprigs fresh thyme
- 2–3 scotch bonnet peppers, whole (optional, for heat)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2–3 dumplings (optional), made from flour and water

Prepare the Ingredients
Rinse the salted meat thoroughly to remove excess salt and cut into bite-sized pieces. Peel and chop the breadfruit (or alternative vegetables). Chop all vegetables and greens, keeping them ready for layering.

Layer the Ingredients
In a large pot, heat the vegetable oil over medium heat. Layer the salted meat at the bottom, followed by breadfruit chunks, root vegetables, carrots, and greens. Add garlic, onion, thyme, and whole scotch bonnet peppers.

Add Coconut Milk and Simmer
Pour the coconut milk and enough water or stock to just cover the ingredients. Cover the pot and bring to a gentle boil. Reduce heat and simmer for 45 minutes to 1 hour, stirring occasionally, until the breadfruit is tender and the liquid is mostly absorbed.

Add Dumplings (Optional)
If using dumplings, shape small pieces of dough and place them on top of the stew during the last 15 minutes of cooking. Cover and continue to cook until dumplings are cooked through.
