Ingredients

  • 2 pounds (about 900 g) potatoes, peeled and cut into chunks
  • 1 cup (240 ml) milk
  • 4 tablespoons butter
  • 4-5 scallions (green onions), finely chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes

Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are tender and can be easily pierced with a fork, about 15-20 minutes.

  2. Mash the Potatoes

Drain the potatoes and return them to the pot. Mash the potatoes until smooth using a potato masher or ricer.

  3. Add Milk and Butter

Heat the milk until warm, then pour it over the mashed potatoes along with the butter. Stir until fully incorporated and creamy.

  4. Mix in Scallions

Fold the finely chopped scallions into the mashed potatoes. Season generously with salt and pepper to taste.

  5. Serve

Serve Champ hot, either as a comforting side dish or as part of a traditional Irish meal. For extra richness, add a small knob of butter on top before serving.
