Ingredients:
4 eggs

1 cup matzah meal
1/4 cup chicken broth

1 onion, diced
2 bay leaves

In a large mixing bowl, beat the eggs and chicken fat (or vegetable oil) until well combined. Gradually stir in the matzah meal, chicken broth, salt, and black pepper until a smooth dough forms. Cover the bowl and refrigerate for at least 30 minutes. In the meantime, bring the 8 cups of chicken broth to a simmer in a large pot. Add the sliced carrots, celery, diced onion, and bay leaves. Once the matzah ball dough has chilled, wet your hands and roll the mixture into balls, about 1 inch in diameter. Carefully drop the matzah balls into the simmering broth, cover the pot, and let them cook for about 30-40 minutes, or until they are cooked through and fluffy.
