Ingredients:

4 eggs

1/4 cup chicken fat or vegetable oil

1 cup matzah meal

1/4 cup chicken broth

1 teaspoon salt

8 cups chicken broth

2 carrots, sliced

2 stalks celery, sliced

1 onion, diced

2 bay leaves

Cover the bowl and refrigerate for at least 30 minutes. In the meantime, bring the 8 cups of chicken broth to a simmer in a large pot. Add the sliced carrots, celery, diced onion, and bay leaves. Once the matzah ball dough has chilled, wet your hands and roll the mixture into balls, about 1 inch in diameter. Carefully drop the matzah balls into the simmering broth, cover the pot, and let them cook for about 30-40 minutes, or until they are cooked through and fluffy. Remove the bay leaves from the soup and discard. Ladle the soup into bowls, placing a few matzah balls in each bowl. Garnish with fresh dill and serve hot.
