Mansaf (Traditional Jordanian Lamb and Yogurt Dish)

Ingredients

  • 2 lbs lamb (bone-in or boneless, cut into large chunks)
  • 3 cups jameed (dried fermented yogurt) or 4 cups plain yogurt
  • 4 cups water (for cooking lamb)
  • 2 cups long-grain rice
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup ghee or vegetable oil
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup pine nuts, toasted
  • Fresh parsley, chopped, for garnish
  • Optional: flatbread (shrak) for serving

Instructions

  1. Cook the Lamb

    Place the lamb in a large pot with water, onion, garlic, turmeric, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the meat is tender and flavorful. Skim off any foam during cooking.

  2. Prepare the Yogurt Sauce

    If using jameed, soak in warm water until softened, then blend until smooth. If using plain yogurt, whisk until smooth. Gradually stir in some of the lamb cooking liquid to temper the yogurt and prevent curdling. Heat the mixture gently over low heat.

  3. Cook the Rice

    Rinse the rice thoroughly under cold water. In a separate pot, bring water to a boil, add salt and a little oil, then add the rice. Cook until tender and fluffy, then drain any excess water.

  4. Assemble Mansaf

    Spread flatbread (if using) on a large serving platter. Layer the cooked rice over the bread, then place the lamb pieces on top. Pour the warm yogurt sauce generously over the lamb and rice.

  5. Garnish

    Sprinkle toasted almonds and pine nuts over the top. Add fresh parsley for color and freshness.

  6. Serve

    Mansaf is traditionally served family-style, where everyone shares from the same platter. Serve with extra yogurt sauce on the side.
