Ingredients
- 500g beef or buffalo meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1-2 stalks lemongrass, bruised and chopped
- 2-3 small eggplants, quartered
- 1 cup wood ear mushrooms, soaked if dried
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1-2 tablespoons chili paste (adjust to taste)
- 1 teaspoon toasted sesame seeds
- 1-2 small dried chilies (optional, for extra heat)
- 2 cups water or beef broth
- 1/2 cup fresh coriander (cilantro) leaves, chopped
- 1 tablespoon toasted ground sticky rice (optional, for thickening)

Prepare the Aromatics
Heat vegetable oil in a large pot over medium heat. Sauté onion, garlic, and lemongrass until fragrant, about 3-5 minutes.

Cook the Meat
Add the beef pieces and brown on all sides. Stir in fish sauce, soy sauce, and chili paste, coating the meat evenly.

Pour in water or beef broth. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the meat is tender.

Add the eggplants and mushrooms to the pot. Simmer for another 15-20 minutes until the vegetables are cooked through. If using, stir in toasted ground sticky rice to slightly thicken the broth.
