Tashreeb (Iraqi Bread Stew)

Ingredients

  • 500 g lamb or chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 cups chicken or lamb broth
  • 4 pieces flatbread (such as Iraqi samoon or pita), torn into pieces
  • 1 carrot, sliced
  • 1 potato, diced
  • Fresh parsley or coriander for garnish
  • Optional: lemon wedges for serving

Instructions

  1. Prepare the Meat

    Heat vegetable oil in a large pot over medium heat. Add the meat pieces and brown on all sides. Remove and set aside.

  2. Cook the Vegetables

    In the same pot, sauté onions until translucent. Add garlic, tomatoes, turmeric, coriander, cumin, salt, and pepper. Cook for 3–4 minutes until fragrant.

  3. Simmer the Stew

    Return the meat to the pot, add the broth, carrot, and potato. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, until the meat and vegetables are tender.

  4. Add the Bread

    Place torn pieces of flatbread into serving bowls. Ladle the hot stew over the bread, allowing it to soak and soften.

  5. Serve

    Garnish with fresh parsley or coriander and serve with optional lemon wedges for added zest.
