Ebbeh

Ingredients
- 1 lb (0.45 kg) millet or sorghum grains
- 1/2 lb (0.23 kg) beef or lamb, cubed

- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 tablespoons peanut butter
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon ground cayenne pepper (optional)
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions

Rinse the Grains
Rinse the millet or sorghum grains thoroughly and drain.

Sauté Aromatics
In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, and sauté until softened.

Add the cubed beef or lamb to the pot and brown on all sides.

Add Tomatoes and Spices
