Ingredients

  • 1 lb (0.45 kg) millet or sorghum grains
  • 1/2 lb (0.23 kg) beef or lamb, cubed
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons peanut butter
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Rinse the Grains

    Rinse the millet or sorghum grains thoroughly and drain.

  2. Sauté Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, and sauté until softened.

  3. Brown the Meat

    Add the cubed beef or lamb to the pot and brown on all sides.

  4. Add Tomatoes and Spices

    Stir in the diced tomatoes, tomato paste, ground ginger, ground coriander, and ground cayenne pepper (if using). Cook for a few minutes until the tomatoes start to break down.

  5. Add the Grains

    Add the rinsed grains to the pot and stir to combine with the other ingredients.

  6. Simmer

    Pour in enough water to cover the grains by about 2 inches. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 45–60 minutes, or until the grains are tender and cooked through.

  7. Incorporate Peanut Butter

    Stir in the peanut butter until it is well incorporated into the Ebbeh.

  8. Season

    Season with salt and pepper to taste.

  9. Serve

    Serve the Ebbeh hot, garnished with fresh parsley or cilantro.
