Mabhonzo Emombe (Zimbabwean Beef Bones Stew)

Ingredients
- 2 kg beef bones with some meat attached
- 2 large onions, chopped
- 4 cloves garlic, minced
- 2 medium tomatoes, chopped
- 2 tablespoons cooking oil
- 1 teaspoon paprika
- 1 teaspoon curry powder (optional)
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 liter beef or water broth
- 2 carrots, chopped
- 2 medium potatoes, cubed
- 1 cup chopped spinach or pumpkin leaves (optional)
- 1 teaspoon dried thyme or a few sprigs fresh thyme

Prepare the Bones
Rinse the beef bones under cold water. Pat them dry and season lightly with salt and pepper.

Brown the Bones
Heat cooking oil in a large pot over medium heat. Add the beef bones and brown them on all sides for extra flavor. Remove the bones and set aside.

Cook the Aromatics
In the same pot, sauté the onions and garlic until fragrant and translucent. Add the chopped tomatoes, paprika, and curry powder, cooking for 5–7 minutes until the tomatoes soften and release their juices.

Simmer the Stew
Return the beef bones to the pot. Pour in the beef broth, ensuring the bones are mostly covered. Add thyme. Bring to a boil, then reduce heat to low. Cover and simmer gently for 2 to 3 hours, stirring occasionally.

Add Vegetables
About 30 minutes before the stew is done, add the carrots and potatoes. Continue simmering until the vegetables are tender. If using leafy greens, stir them in during the last 10 minutes of cooking.

Serve the stew hot with sadza (maize meal), rice, or bread. Spoon plenty of the rich, flavorful broth over your serving.
