Prepare the Oven

Marinate the Meat
In a large bowl, combine the soy sauce, minced garlic, minced ginger, salt, and pepper. Rub this mixture all over the chicken or pork.
-
Wrap the Food
Wrap the marinated meat, cassava, taro, sweet potatoes, and vegetables individually in banana leaves or aluminum foil. Drizzle the coconut cream over the vegetables before wrapping.
-
Layer the Food
Place a layer of hot stones at the bottom of the pit. Add the wrapped meat and vegetables on top of the stones. Cover with another layer of hot stones.
-
Seal the Pit
Cover the food with banana leaves or a wet burlap sack, then add a thick layer of soil to seal the pit and keep the heat inside. Let it cook for about 3-4 hours.
-
Uncover and Serve
Carefully uncover the pit, remove the wrapped packages, and unwrap them.
