Kraški Pršut (Karst Prosciutto)

- 1 fresh pork leg (about 8–10 kg), skin on
- 1.5–2 kg coarse sea salt
- Fresh mountain air (cool and dry environment, ideally 12–16°C with moderate humidity)

Prepare the Pork Leg
Trim the pork leg carefully, removing excess fat and shaping it into a traditional rounded form. Leave the skin on, as it helps protect the meat during curing.

Salting
Rub the entire leg generously with coarse sea salt, ensuring that every part is well covered. Place the leg in a cool place (2–5°C) for about 3 weeks. During this time, occasionally reapply salt and drain any liquid that forms.

Resting
After salting, wash off the excess salt with lukewarm water and let the leg rest for about one month in a cool, airy space. This stage allows the salt to penetrate evenly and begin flavor development.

Drying and Curing
Hang the leg in a well-ventilated area with a steady airflow – traditionally, this is done using the natural bora wind of the Karst region. The drying process lasts 6 to 12 months, depending on the size of the leg and the desired flavor intensity. The pršut should gradually lose about one-third of its original weight.

Aging
Allow the ham to mature further in a cool, dry cellar for several additional months. The longer it ages, the deeper and more complex the flavor becomes.

Slice Kraški Pršut paper-thin using a sharp knife. Serve at room temperature to fully appreciate its aroma and texture. Pair it with local Teran wine, fresh bread, olives, or cheese for an authentic Slovenian experience.
