Kāpostu Zupa (Latvian Cabbage Soup)

Ingredients

  • 1 small head of cabbage, chopped
  • 2 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 onion, finely chopped
  • 2 tablespoons vegetable oil
  • 500 g pork or beef, diced (optional for a meat version)
  • 6 cups water or broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 teaspoon caraway seeds (optional)
  • Fresh dill, chopped (for garnish)

Instructions

  1. Prepare the Vegetables and Meat

    Heat vegetable oil in a large pot over medium heat. Add the onion and sauté until soft and translucent. If using meat, add it now and brown slightly.

  2. Add the Vegetables

    Stir in the carrots, potatoes, and chopped cabbage. Cook for 5 minutes, stirring occasionally.

  3. Simmer

    Pour in the water or broth and add bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, or until vegetables and meat are tender.

  4. Season

    Remove the bay leaves. Season the soup with salt, pepper, and caraway seeds (if using). Adjust seasoning to taste.

  5. Serve

    Ladle the soup into bowls and garnish with fresh chopped dill. Serve hot, ideally with rye bread on the side.
