Kiluvõileib is a classic Estonian open-faced sandwich featuring marinated sprats on hearty dark rye bread. It's a flavorful snack or appetizer that showcases traditional Estonian flavors.

Ingredients

  • 8 slices dark rye bread (0.5 lb / 0.23 kg)
  • 16 marinated sprats (0.7 lb / 0.3 kg)
  • 4 hard-boiled eggs (0.5 lb / 0.23 kg), sliced
  • 1 red onion (0.2 lb / 0.1 kg), thinly sliced
  • 1/2 cup (0.1 kg) butter, softened
  • Fresh dill (0.1 lb / 0.05 kg), for garnish
  • Lemon wedges, for garnish
  • Black pepper, to taste

Instructions

  1. Prepare the Bread

    Spread a thin layer of softened butter evenly on each slice of dark rye bread.

  2. Layer the Ingredients

    Place 2 marinated sprats on each slice of buttered bread. Add slices of hard-boiled egg on top of the sprats.

  3. Add Onions and Season

    Place a few thin slices of red onion over the eggs and sprinkle with freshly ground black pepper to taste.

  4. Garnish
