Chakalaka (South African Spicy Vegetable Relish)

- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon smoked paprika
- 1 can (400 g) chopped tomatoes
- 1 can (400 g) baked beans or butter beans, drained
- 1 carrot, grated
- Salt and black pepper to taste
- 1 small chili (optional), finely chopped
- 2 tablespoons tomato paste

Prepare the Vegetables
Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion, green and red bell peppers, and garlic. Sauté until the vegetables are soft and fragrant, about 5–7 minutes.

Stir in the curry powder, smoked paprika, and chili (if using). Cook for 1–2 minutes, allowing the spices to release their aroma.

Combine Tomatoes and Beans
Add the chopped tomatoes, tomato paste, grated carrot, and drained beans. Stir well to combine all ingredients.

Reduce heat to low, cover, and let the mixture simmer for 15–20 minutes, stirring occasionally. Season with salt and black pepper to taste. The Chakalaka should be thick, vibrant, and slightly saucy.
