  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups vegetable or fish stock
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 2 cups chopped spinach or kale
  • Juice of 1 lime
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Prepare the Base

    Heat vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the garlic and ginger and cook for another minute until fragrant.

  2. Cook the Vegetables
