Discover the comforting taste of Swedish cuisine with Kroppkakor, traditional potato dumplings filled with savory pork and onions. These hearty dumplings are perfect for a cozy family dinner or a special gathering, offering a delicious combination of soft potato dough and flavorful filling.
Ingredients
- 2 pounds (900 g) potatoes, peeled
- 1 cup all-purpose flour (plus extra for dusting)
- 1/2 cup potato starch
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 8 ounces (225 g) smoked or salted pork, finely chopped
- 1 small onion, finely chopped
- 1 tablespoon butter
- 1/4 teaspoon ground allspice (optional)
- 4 cups water or broth (for boiling)
- Butter and lingonberry jam, for serving
Instructions
-
Prepare the Potatoes
Boil the peeled potatoes in salted water until tender, about 20 minutes. Drain and mash them thoroughly until smooth. Allow to cool slightly.
-
Make the Dough
In a large bowl, combine the mashed potatoes, flour, potato starch, salt, and white pepper. Knead gently until a smooth dough forms. If the dough is too sticky, add a little more flour.
-
Prepare the Filling
In a skillet, melt butter over medium heat. Sauté the chopped onion until soft and translucent. Add the chopped pork and cook until lightly browned. Season with salt, pepper, and optional allspice. Remove from heat and let cool slightly.
-
Shape the Dumplings
Divide the potato dough into small portions, about the size of a golf ball. Flatten each portion in your hand and place a spoonful of the pork filling in the center. Fold the dough over the filling and seal carefully, shaping it into a smooth dumpling.
-
Cook the Kroppkakor
Bring a large pot of water or broth to a gentle boil. Carefully drop the dumplings into the water, making sure they do not stick together. Cook for 10–12 minutes, or until the dumplings float to the surface and are cooked through. Remove with a slotted spoon and drain well.
-
Serve
Serve the Kroppkakor hot, topped with melted butter and a side of lingonberry jam.
