Koba (Madagascar Peanut Dessert)

Experience the unique flavors of Madagascar with Koba, a traditional sweet treat made from peanuts, brown sugar, and rice flour, wrapped in banana leaves and steamed to perfection. Ingredients

  • 2 cups roasted peanuts, finely ground
  • 1 cup brown sugar
  • 1 cup rice flour
  • 1/2 cup water
  • Banana leaves for wrapping (or parchment paper)

Instructions

  1. Prepare the Peanut Mixture

    Grind the roasted peanuts until fine. In a bowl, mix the ground peanuts with rice flour and brown sugar.

  2. Add Water

    Gradually add water, stirring until the mixture forms a thick, sticky dough.

  3. Wrap the Mixture

    Cut banana leaves into rectangles and lightly soften them over heat. Place a portion of the peanut mixture in the center of each leaf and fold into a tight package.

  4. Steam or Boil

    Steam the wrapped packages for about 1 hour, or boil gently until firm and set.

  5. Cool and Serve

    Let Koba cool slightly before unwrapping. Slice into pieces and serve as a sweet snack or dessert.
