LapLap (Traditional Micronesian Coconut Pudding)

- 2 cups grated taro, cassava, or sweet potato (or a mix)
- 1 cup coconut milk

- Banana leaves or aluminum foil for wrapping

Prepare the Mixture
In a large bowl, combine the grated root vegetables with coconut milk, sugar, and salt. Mix thoroughly until a smooth, slightly thick batter forms. Taste and adjust sweetness if needed.

Prepare the Wrapping
If using banana leaves, soften them by briefly heating over a flame or dipping in hot water to make them pliable. Cut leaves into squares large enough to wrap individual portions.

Assemble the LapLap
Place a portion of the mixture onto the center of each leaf. Add optional fillings if desired. Fold the leaves over the mixture to form a secure parcel. If using foil, wrap tightly.

Arrange the wrapped parcels in a steamer or on a baking tray. Steam over medium heat for 45–60 minutes, or bake at 350°F (175°C) for 30–40 minutes, until the pudding is firm and cooked through.
