  • 2 tablespoons vegetable oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper

  • 1 bay leaf
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the Meat

    Heat the vegetable oil in a large pot over medium-high heat. Season the meat with salt and pepper, then brown it in batches until golden on all sides. Remove the meat and set aside.

  2. Cook the Vegetables

    In the same pot, add onions, garlic, and carrots. Sauté for 5–7 minutes until slightly softened and fragrant.

  3. Simmer the Stew

    Return the meat to the pot. Add the potatoes, broth, thyme, and bay leaf. Bring to a boil, then reduce the heat to low and cover. Simmer gently for 1.5 to 2 hours, or until the meat and vegetables are tender. Stir occasionally.

  4. Season and Serve

    Remove the bay leaf. Taste and adjust seasoning with additional salt and pepper if needed. Sprinkle with fresh parsley before serving.
