Indio Viejo (Nicaraguan Beef Stew)

Ingredients
- 2 lbs beef stew meat, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 tomatoes, chopped
- 1/4 cup sour orange juice (or substitute with equal parts orange and lime juice)
- 2 teaspoons achiote (annatto) powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups beef broth
- 1/2 cup corn masa (corn dough)
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped green onions

Prepare the Beef
Heat the vegetable oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper, then brown them in batches until all sides are seared. Remove the beef and set aside.

Cook the Vegetables
In the same pot, add the onion, garlic, and red bell pepper. Sauté until softened and fragrant. Add the chopped tomatoes and cook for another 5 minutes until the tomatoes break down.

Build the Stew
Return the beef to the pot. Stir in the sour orange juice, achiote powder, cumin, and oregano. Pour in the beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.

In a small bowl, mix the corn masa with a few tablespoons of water to form a smooth paste. Gradually stir the masa into the simmering stew, cooking for an additional 10–15 minutes until the stew thickens. Adjust seasoning with salt and pepper.

Stir in fresh cilantro and green onions just before serving. Serve hot with rice, tortillas, or a side of fried plantains for a complete Nicaraguan meal.
