Ingredients

For the Meatballs:
  • 1 lb ground beef
  • 1/4 cup uncooked white rice
  • 1/4 cup finely chopped onion
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Soup:
  • 6 cups beef or chicken broth
  • 2 medium carrots, peeled and sliced
  • 2 medium zucchini, sliced
  • 2 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Prepare the Meatballs

In a large bowl, combine ground beef, uncooked rice, chopped onion, egg, minced garlic, parsley, salt, and pepper. Mix thoroughly until all ingredients are well incorporated. Shape into small meatballs, about 1 inch in diameter, and set aside.

  2. Make the Soup Base

In a large pot, heat a little oil over medium heat. Add chopped onion and garlic, sautéing until fragrant and translucent. Stir in diced tomatoes and oregano, cooking for 2–3 minutes.

  3. Cook the Meatballs

Pour in the broth and bring to a gentle boil. Carefully add the meatballs, making sure not to overcrowd the pot. Reduce heat to a simmer and cook for 15 minutes, partially covered, until the meatballs are mostly cooked through.

  4. Add Vegetables

Add carrots, potatoes, and zucchini to the soup. Continue simmering for another 15–20 minutes, or until the vegetables and meatballs are fully cooked. Season with salt and pepper to taste.

  5. Serve

Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side for a bright, zesty touch.
